Mikura White Vinegar Gekka

Japanese sake lees vinegar

For most Westerners, the word "vinegar" brings to mind fermented fruits and particularly grapes. In Japan, though, where fruits are considered a luxury, using them for vinegar would be a terrible waste, so people have been exploring different ingredients for many years. The most obvious candidate is, of course, rice but the makers of the Mikura White Vinegar Gekka tried a very Japanese alternative, sake (actually sake lees), and the results will amaze you!

Using sake lees from Mie Prefecture that have been aged for three years, the Mikura White Vinegar Gekka has a deep flavor that brings to mind aged wine vinegar but, at the same time, is gentle and perfectly suited for Japanese cuisine. Whether it's pickled vegetables, sushi rice, fish, gyoza dumplings, ramen noodles, or, if you are in a more Western mood, a dressing for your salad, this vinegar brings out flavors you never knew were there! Available in a 300 ml (10.1 fl oz) or smaller 70 ml (2.4 fl oz) bottle, if you want a sampler first.
