The Yoshiichi Shoyu Koji Mold Set contains a 180 g (6.3 oz) pack of soy sauce, Yoshiichi's standard product. Then comes a pack of salted koji, a salt-koji combination that can be used as a salt substitute for seasoning pretty much anything, and then a trio of amazake (sweet sake), each brewed with a different type of koji (black or white) or using a different type of rice (regular, brewers, or germinated brown). If you are wondering why so many amazake, it's because amazake is extremely versatile and can be used as a dessert, drink, dressing for salads, or even sweetener!
