And we aren't just talking fish, seafood, or seaweed: if you go to the town of Suzu in Ishikawa Prefecture on the coast of the Sea of Japan, you'll find that locals have a unique way of harvesting sea salt using a 400-year-old method called agehama, which involves spreading the seawater on the sand using handbuckets and then boiling the whole thing to extract the salt crystals. This type of salt is used in in the Noto Salt Cider.
