The Japanese, though, immediately understand that this is a rice cooker ("gohan" means "cooked rice" or "meal") and that its design has drawn its inspiration from the kamado, the traditional cook stove that uses wood or charcoal as fuel. What makes Balmuda The Gohan cook the best rice you have ever tried isn't the abundance of automation and menu options. It does have five modes to cover all types of rice cooking: white rice, brown rice, rice gruel, takikomi gohan (rice with meat, fish, or vegetables), and a fast mode for white rice. But the real magic happens thanks to its double pot: an outer pot made of fluorine-coated aluminum and an inner one made of fluorine-coated stainless steel. The way the temperature transfers between the two allows the steam to move in a way that really brings out the texture and taste of each grain.
