Ando Jozo Junen Saishikomi Igo Soy Sauce

Top-grade double-brewed condiment

There is a lot to unpack in the Ando Jozo Junen Saishikomi Igo Soy Sauce name, other than the self-explanatory "soy sauce" part. Ando Sozo is the name of the soy sauce brewer, an institution of Akita Prefecture since 1854. The "saishikomi" part means that the sauce is double brewed, i.e., instead of soybeans, wheat, salt, and water, it's made of soybeans, wheat, salt, and yet more soy sauce, this time aged. And the "junen" part refers to 10 years, which is how long the soy sauce is aged.

Which brings us to "igo": it tells you that all the above means the Ando Jozo Junen Saishikomi Igo Soy Sauce is first class. The double brewing results in more umami and also a more naturally sweet flavor, which makes it ideal for sashimi, sushi, and any type of raw seafood, though it's equally fine as a cooking ingredient in its own right for saute vegetables and teriyaki sauce. A 360 ml (12.2 fl oz) bottle of one of the deepest, best soy sauces you can find in Japan, guaranteeing you dozens of unique dining experiences!
